Pai Mu Tan
Harvested by hand for 1-2 weeks a year each Spring, only the silvery buds and top young leaves are picked to make this high quality white tea.
The leaves are withered in the sun to develop an aromatic floral aroma, and processed very lightly to produce a delicate tea with notes of peach and a smooth mouthfeel.
This white tea shares many of the same floral characteristics as the highly prized Silver Needle while being more robust in flavour, and has a fuller body and deeper coloured liquor.
Brew: Measure 2g (1 heaped teaspoon) per 200ml cup. Infuse at 80°C for 2.5 minutes.
